Rogan protégé set to go it alone

One of the most senior members of Simon Rogan’s Michelin-star winning team is set to leave the celebrity Chef to create his own restaurant.
 
Mark Birchall has worked alongside Rogan for nearly ten years but will put in his final shift on 31st July in order to launch his own establishment next summer.
 
He is currently the Group Executive Chef of Northern Operations for the Umbel Restaurant Group which looks after Rogan’s five restaurants in the north of England, including the two Michelin-starred L’Enclume and Rogan & Co in Cartmel, and The French and Mr Cooper’s House & Garden which are both based at The Midland in Manchester.
 
Initially starting out in a Sous Chef job at L’Enclume in 2006, he became Head Chef in 2008 before moving to his current role late last year.
 
Speaking about his protégé, Rogan said: “Mark has given me nine years of his culinary life, and I am grateful for his phenomenal contribution to our restaurants’ achievements. I wish him all the best for the future, and I will do all I can to help him in his new venture, which I am sure will be a great success.”
 
In return, Birchall said that he was grateful for being given the opportunities to develop his career over the past decade and that L’Enclume will “always have a special place” in his heart.
 
Rogan has already started the search to find Birchall’s replacement and is said to be exploring all options.
 
Opening a slightly different eatery is Sat Bains who launched his “restaurant within a restaurant” earlier this month.
 
Called Nucleus, the new six-seat outlet is based at the Chef’s two Michelin-starred Restaurant Sat Bains with Rooms in Nottingham, and is located in a self-contained building with its own dedicated kitchen.
 
Diners at the exclusive establishment can expect to see a menu featuring new ideas as well as “evolutions” of the Chef’s existing dishes, including scallops, braised pig's trotter and ponzu jelly.
